Turn holiday turkey into lovely leftovers

(NC)—The holiday turkey dinner is always a huge hit – but what do you do with all that leftover food? Bob Blumer, host of Food Network Canada’s The Surreal Gourmet, suggests gobbling up an alternative to the traditional fare of pot pies and sandwiches. Quirky Turkey Hash with Sunny Side-Up Eggs is a yummy treat that’s perfect for using up the remaining turkey and fixings.

• Add 2 tablespoons each of olive oil and butter to a sauté pan (medium-high heat).

• Add 4 cloves minced garlic, 4 chopped scallions (or 1/2 small onion) and leftover veggies (1 cup each of root vegetables – leftover roasted potatoes, carrots, yams etc. – all diced into 1/4 inch cubes). Cold mashed potatoes or other mashed veggies can be chopped and substituted for solid veggies. Sauté for 10 minutes, or until veggies begin to brown.

• Add 1cup turkey leftovers, cut into 1/2-inch pieces, 1/4 cup of any leftover fresh herbs or parsley (coarsely chopped) salt, pepper and 1/4 teaspoon chili powder or cayenne pepper, and continue to sauté until contents are transformed into crispy browned nuggets. Remove pan from heat.

• Add 1 tablespoon butter to a separate sauté pan (medium heat), and cook two eggs sunny-side-up.

• To serve, spoon half of the turkey hash on a plate, then slide one sunny-side-up egg over top. (Serves 2)
